Bacon Avocado Lettuce Tomato Pitta Pocket

Soooo good! And you can prep ahead for a few days too!

Ingredients - serves 1 (but you can double up and prep ahead for 2 lunches)


  • 1 x warburtons pitta pocket (the best thing ever)

  • 3 x smoked bacon medallions

  • 50g mashed avocado with a dash of lemon juice (the lemon juice will keep it from going brown)

  • 15g rocket leaves

  • 1 x 40g vine ripened tomatoes (so sweet and juicy)

  • 1 tsp light mayo



Method


I air fried a packet of bacon medallions so I can have this lunch for a few days.


Mashed avocado and added lemon juice and popped in a Tupperware tub so I can use all week.


Combine all other ingredients into pitta! Enjoy!


Combine and enjoy!
