Cajun Chicken Quesadillas

Slow cooker edition


This is amazing for meal prep and a massive time saver!

I am legit loving the convenience of my slow cooker. 5 mins prep in the morning and a delish meal ready in the evening!


Ingredients (serves 3) 168 calories per portion for chicken mix only


  • 2 x chicken breasts

  • 1 tsp sweet smoked Paprika

  • 2 tsp Cajun seasoning

  • 10g garlic purée

  • 200g garlic passata


Combine all of this in your slow cooker mix well and cook on a LOW heat for 4.5 hours.

Once cooked use a fork and knife to shred your chicken.


This mix can be used with lots of different things and is idea for food prep.


I served mine like a quesadilla- I used two mini wraps (under 100 kcal each) My George Forman, some sautéed red onion and peppers and some grated mozzarella cheese!


This is a fav in our house!
