Cheesy scrambled egg and bacon on toast

One of my favs when I have more time to make breakfast! Or I have it as lunch or dinner if I’m after something light.


Under 400 cals and almost 40g of protein- so you’ll be fuller for longer!




393 calories per serving (recipe makes 1)

Ingredients


  • 1 x slice of whole meal seeded bread - mine was 109 cals per slice from Aldi

  • 2 x eggs

  • 20ml skimmed milk

  • 20g 50% less fat mature cheese (I get this from Asda)

  • 2 x smoked turkey rashers (58cals for two) you could swap for bacon medallions (this has way less fat as the fatty bit of cut off so less cals too)

  • 40g vibe ripened tomatoes- chopped up - so sweet and delish when from the vine!


Method


In a bowl add two eggs, milk and cheese and microwave (yes I make my eggs in the microwave) I do in 30 seconds bursts and I keep checking the scrambled egg to make sure it doesn’t overcook and I stir well. Usually takes just over 1 mins.


I grill my turkey rashers in the air fryer for 2-3 mins.


And toast bread. I don’t add butter. It doesn’t need it in my opinion so I save 50+ calories with no butter!
