Chicken and bacon Caesar salad baked potato

So yummy! Ross is loving baked potatoes so I’m trying lots of tasty filler recipes.

Ingredients


  • 2 x baking potatoes (raw weight 590g)

  • 1 x chicken breast (raw weight 260g)

  • 2 x smoked bacon medallions

  • 6 x vine ripe cherry tomatoes - quartered

  • 100g little gem lettuce - shredded

  • 100ml hellmans real caesar dressing

  • 5g grated padano (powdered Parmesan)

  • 16 sprays 1 kcal spray


Method


Pre heat oven to 200 degrees.


Wash and dry potatoes.


Prick with folk. Spray each potato with 3 sprays of 1kcal spray and salt.


Pop in oven for 1 hour to 1 hour 10 mins.


While your potatoes are baking…


Wrap chicken breast in tin foil and bake for 25 mins or until cooked through.


Cook your bacon medallions- I done mine in the air fryer for 9 mins until they were nice and crispy.


Once chicken and bacon is cooked. Shred your chicken in a large bowl using two forks. Cut bacon up and add to chicken. Combine lettuce, tomatoes and dressing and mix well.


When baked potatoes are done. Fill.  To finish I sprinkled a tsp of Parmesan cheese.
