Chicken and Mushroom Stroganoff

Such a winter warmer! Can be served with mash, rice or pasta. I opted for some homemake garlic sweet potato mash! I’ll share the recipe for this below too!

Ingredients


  • 300g raw chicken breast- diced

  • 70g white onion - diced

  • 80g white mushrooms- peeled and sliced

  • 10g garlic purée

  • 15ml Worcestershire sauce

  • 1tsp smoked paprika

  • 12g whole grain mustard

  • 50g lightest philidelphia cream cheese

  • 50g light creme fraiche

  • Half of an oxo less salt check stock cube (dissolved in 150ml boiling water)

  • 2tsp dried parsley


Method


In a large pan brown your chicken (I used some 1kcal spray to keep oil cals low)


Remove chicken once it’s nice and brown.


In the same pan on a lower heat sautee your onions for 5-6 mins. Cook until soft and not brown.


Then add your mushrooms, paprika, mustard, garlic purée and Worcestershire sauce and stir for a minute or so.


Add stock and your chicken and simmer for a further 5 mins to cook your chicken through and reduce the sauce a little.


Finally add cream cheese, creme fraiche, parsley and season with salt and pepper.


Stir well and serve!


Garlic mash Recipe


40% cals - 184 cals (if you take 40% of the sweet potato mash)  p.4g  f.4g  c. 36g


50% cals- 240 cals (if you take half of the sweet potato mash) p. 5g f: 5g c. 45g


I give Ross more so I take 40% of the mash and Ross has 60%.


Ingredients


  • 500g of peeled and chopped up sweet potato

  • 3 garlic over peeled

  • 18g lighter lurpack or norpak

  • Salt and pepper


Method


In a large pan add sweet potato chunks and garlic cloves and boil until soft (around 15 mins)


Drain and mash adding butter and salt and pepper!


Finally serve! I added some longstem broccoli to the side (not accounted for in cals above)
