Chicken, chorizo rice one pot

This is ideal for meal prep! And all made in 1 pot!

Less washing of dishes.

Ingredients


  • 350g chicken breast- cut into cubes

  • 1 x tins of chopped tomatoes (400g per tin)

  • 1× diced red onion

  • 2× diced peppers -yellow and red (mine were small ones)

  • 1 × packet of Mexican micro rice

  • 1 × low salt chicken stock cube - 100ml of water to dissolve stock cube

  • 15g chipotle paste

  • 2× tsp smoked paprika

  • 20g tomato purée

  • 5g garlic purée

  • 30g chorizo sausage - diced


Method


In a large frying pan using frylight sautee your onion and peppers for 5-10 mins on a low heat (until soft)


Next add your chicken breast and chorizo sausage and brown (I turn the heat up at this point)


Next add chipotle paste, garlic and tomato purée, and smoked paprika. And mix well.


Next add your chopped tomatoes and chicken stock. And simmer on a low heat for 5 mins.


Finally When you're ready to serve add in your bag of micro rice (you don't need to heat it up before hand) break it up and mix it through the chicken and sauce! It only needs a few minutes to heat up the rice.


Boom, you're ready to serve!
