Chicken Taco Baked Potato

A protein packed filling that’s super quick to make! And although baked potatoes take a while in the oven- you can chuck them in and crack on with other things!





(serves 4) ideal for food prep!

Ingredients


  • 4 x baking potatoes (combined weight of 880g)

  • 1 kcal spray

  • Sea salt


  • 500g chicken mince

  • 1 x packet of taco mix

  • 1 x tin of chopped tomatoes

  • 120g of grated red leister cheese



Method


Pre heat oven to 200 degrees.


Wash and dry potatoes.

Prick with folk. Spray each potato with 3 sprays of 1kcal spray and salt.


Pop in oven for 1 hour to 1 hour 10 mins.


While your potatoes are baking…


In a large pan using 1 kcal spray brown your chicken mince. Add taco seasoning and tinned tomatoes and allow to simmer for 10 mins. (Reheat when potato are ready)


I served mine with a full of goodness yummy side salad!
