Ingredients
2 x chicken breast - diced - 300g
1 x large onion- diced - 100g
1 x bell pepper- diced- 100g
12 cherry tomatoes
500g passata with garlic
20g Curry Powder (Tikka) - I got mine from Asda
5g garam masala powder
10g garlic purée
3g ginger purée
8g chilli purée
Half tsp sugar
120g full fat Greek yogurt
Big handful of fresh coriander
*I cooked everything on a low heat and used Frylight 1kcal oil (not tracked in calories above)*
Method
In a large pan Spray some oil and slowly cook your onions and peppers on a very low heat for 15 mins. Cooking on a low heat will allow onions to sweeten.
Add cherry tomatoes, curry powder, garam masala, garlic, ginger and chilli purée and mix well.
Add passata and sugar and stir well.
In a separate pan. Brown your chicken chunks and then add to your curry sauce.
Simmer on a low heat for 30 mins. You may need to add a splash of water if your sauce thickens too much (remember you are adding yogurt so don’t add too much water)
Just before serving add your fresh coriander and stir. Make sure the curry is really hot (temp then remove from heat).
Now your pan is off the heat add in your yogurt and stir well!
Your curry is now ready to serve!
