A delish tasty meat free Nando’s inspired rice meal! Yum!

Ingredients
150g of light halloumi
1 x packets of Mexican micro rice
130h tomato passata
1 x onion - finely chopped (60g)
2 red/ green bell pepper-I cut mine into little cubes (200g)
50g frozen peas
1tsp peri peri seasoning
1tsp smoked paprika
10g tomato puree
Halt a less salt vegetable ox cube dissolved in 80ml boiling water
20g peri peri sauce (I used Aldi bramwells version)
5g garlic purée
150g of fat free cottage cheese
Method
In a large pan using 1kcal spray sautée onion and peppers for 5 - 10 mins on a low heat until soft.
Then add peri peri seasoning, garlic purée and tomato puree and mix.
Add vegetable stock, passata, peas and rice (separate the rice while in the bag by pressing down on the bag with your palm) stir well and turn the heat down.
**While your rice mix is simmering on a low heat- In a large bowl add cottage cheese, peri peri sauce and garlic purée- using an electric hand mixer blitz until smooth or use a blender.
**In a separate pan dry fry (no oil) your halloumi until it’s browned and crispy!
Now add your cheese sauce with the heat off on pan- mix and serve! Top with halloumi and enjoy!
