Crispy Cajun chicken burger (cornflakes edition)

This is insanely crispy! I will 100% make it again! And you can mix up the seasoning too. Bbq is next for us 🤣

Ingredients

  • 2x small chicken breasts (150g each) or 1 large Breast shared between too.

  • 50g cornflakes

  • 1 egg

  • 3 tsp Cajun seasoning

  • Half tsp garlic granules

Method


Preheat oven to 200 degrees


Weigh out cornflakes and pop them in a food bag and add Cajun seasoning and garlic granules. . Crush the cornflakes and mix well.


In a bowl, whisk your egg.


We used two very small chicken breast (we had one each- weighing 150g) but if you get a larger chicken breast butterfly it and cut in half. And have one half each.


I used the end of my rolling pin because I don’t have a mallet to flatten the chicken breast.


Dip the chicken into the egg and then coat in the cornflake mix


Once coated put the chicken on your grill rack - so heat can get all around the breast- if you lay flat on a baking tray one side may end up soft instead of crispy)


Pop in the oven for 20-22mins or until cooked.


I served mine in a broiche bun with some homemade chipotle Mayo (light Mayo and a dash of chipotle paste) salad and a low fat cheese slice.
