Fire Cracker Prawns with sticky rice

Such a quick and tasty meal! I made this and Ross had a takeaway! I was eating before his takeaway arrived!

Ingredients


  • 200g frozen king prawns (thaw in fridge as per instructions on bag)

  • 200g red peppers finely sliced

  • 60g red onion finely sliced

  • 80g carrots- cut into thin strips

  • 10g garlic purée

  • 6g ginger puree

  • 20g sweet chilli sauce

  • 44g siracha sauce

  • 20g clear honey

  • 60ml light soya sauce

  • 80g frozen peas


  • 2 x veetee sticky rice pots


Method


Prep sauce- In a bowl combine siracha sauce, sweet chilli sauce, honey, garlic purée, ginger puree, soya sauce and a splash of water and mix well.


In your frying pan over a high heat Add the prawns and cook for about 90 seconds, until they are pink all over. (I didn’t use oil)


Remove the prawns from the pan and set aside. Turn the heat down to a medium, then add in the sliced onion, pepper, carrot and peas and stir fry for a couple of minutes.


Add your sauce and stir well.


Add the prawns back into the pan. Stir well and warm through the prawns.


And serve with your rice! Yum!
