Such a quick and tasty mid week or takeaway meal.
500 calories per serving (recipe serves 2)

Ingredients
250g of lean 5% fat beef mince
300g fresh egg noodles
60g Red onion - diced
100g carrot - cut into thin strips
100g red pepper- cut into thin strips
2 x spring onions
40ml hoisin sauce
10g garlic purée
5g ginger puree
40ml light soya sauce
1tsp dried chilli flakes
Method
Stir fry your onion, carrot and pepper got 5 mins on a high heat moving veg around the pan regularly!
Add beef mince and brown for a few mins- again moving around the pan with the veg regularly.
Then add noodles- I cut mine with scissors so they break up easily and aren’t clumpy. Stir fry for a few minutes to heat through.
Finally add hoisin sauce, soya sauce, garlic and ginger puree, and chilli flakes! Again stir well and heat through for a couple of mins!
Serve and top with spring onion!
We had some prawn crackers with ours. I weight out 10g at 50 calories! (Prawn crackers not included in main recipe cals above)
