Oh we will definitely be having this again!
Such a quick, chop it up and chuck it in style recipe.

Ingredients - serves 4
Chicken marinade
4 x chicken thighs (580g)
Juice of half a lemon (I used bottled lemon juice)
3 x crushed/ minced garlic gloves
1 tsp dried parsley
1 tsp dried basil
1 tsp smoked paprika
15ml balsamic vinegar
10 sprays of 1kcal spray
10g (1tsp) whole grain mustard
The rest
10 x sprays of 1kcal spray
1 x red onion- quarter
1 x yellow pepper- cut into chunks
150g courgette - sliced
120g sweet vine ripened tomatoes- whole or cut in half depending on size
14 x black pitted olives
80g feta cheese
Method
Preheat oven to 200 degrees.
In a large bowl or Tupperware tub combine all of the chicken ingredients. Mix well and let the chicken marinate for 10-15 mins while you prep veg.
Line a baking tray with tin foil and prep veg and place on baking tray. (DO NOT ADD olives or Feta yet)
Add marinaded chicken thighs to veg and pop in the oven for 30 mins.
After 30 mins add feta and olives and pop back in the oven for 10 mins.
And done! I served with rocket, some basmati rice and tzatziki.
