A super tasty high protein easy to prep ahead sandwich filler!
The filling alone packs 19g of protein and some lovely healthy fats!

Ingredients
Two hard boiled eggs
60g cottage cheese
Half tsp whole grain mustard
10g finely diced red onion
Splash of lemon juice (I used a bottle lemon juice)
Salt and pepper
Method
Boil eggs and low to cool. Or play in ice once boiled.
In a bowl combine cottage cheese, lemon and mustard and blitz using a hand blender until smoother.
Add chopped eggs and red onion. Mix and done!
I had mine in a pitta pocket with rocket and sweet vine ripe cherry tomatoes! yum!!!
It would be lovely on some sourdough, a toasted protein bagel?
