Marry me halloumi pasta

Oh this is so tasty! And with a few lower calorie swaps I’ve made a calorific dish less calorific! I'd serve this to guests, it feels naughty but it's not)


It also contains 40g of protein thanks to the halloumi! A fab meat free protein source!

701 calories per portion (recipes serves 2 people)

P: 40g C: 62g F: 31g


Ingredients


  • 150g dried pasta (300g cooked weight- I weighed out again when cooked to make sure it was just 300 calories)

  • 200g lighter halloumi cheese ( I got mine from Aldi)

  • 50g drained sundried tomatoes (chopped up)

  • 1 x finely chopped onion (60g)

  • 100g halved cherry tomatoes

  • 50ml lighter double cream

  • 50g lightest Philadelphia cream cheese

  • Half a chicken oxo stock cube dissolved in 60ml boiling water

  • 8g garlic purée

  • 30g tomato puree

  • 1 tsp smoked paprika

  • Half tsp of chilli flakes (more if you like it hot)

  • 1 tsp dried basil

  • And a handful of fresh basil - chopped

  • sprinkle with a touch of Parmesan



Method


Firstly put pasta on to boil.


Slice and fry halloumi (I done this on a low heat with no oil- to save calories)


In a large pan sautée onion and tomatoes for 5 mins until soft (low heat and a bit of 1kcal spray)


Then add garlic purée, tomato puree, chilli flakes, dried basil and stir for a minute or so.


Add philidelphia, stock and double cream and stir well.


Add sundried tomatoes and basil and allow to cook for a minute or so.


(Drain pasta and weigh out to make sure it’s 300g when cooked) add pasta to sauce stir and plate up.  Top with halloumi or mix halloumi into pasta before serving. Top with a small sprinkle of Parmesan.
