Mediterranean halloumi pasta (meat free)


A quick and super tasty meat free pasta dish, suitable for the whole family! This is now a new quick, cheap dinner in our house!

Ingredients


  • 140g lighter halloumi (Aldi) - cut into cubes

  • 10 black pitted olives (Aldi) - halved

  • 30g sundried tomatoes - Finley chopped

  • 10 vine ripe cherry tomatoes - halved

  • 2 garlic cloves - crushed

  • 150g courgette - finely sliced and cubed

  • 300g tomato passatta

  • Half tsp sugar

  • 5 basil leaves - finely sliced

  • 300g of COOKED spaghetti pasta (approx 150g dried) I weighted out cooked pasta then added



Method


In a frying pan brown your halloumi. I used 1kcal spray to keep the oil calories down.


Once browned remove from pan to a plate and keep to the side.


Add cherry tomato halves to your pan and sautee (low heat) for 2 mins. Remove and add to plate with halloumi chunks.


Put pasta on to boil now.


In your pan add crushed or finely sliced garlic and courgettes to pan and stir fry for a few mins until the courgette starts to soften.

Then add passatta, sundried tomatoes, olives, paprika, sugar and basil and simmer for 10 mins. I added salt and pepper at this stage too.


Drain pasta. Weight out to 300g cooked. Add to sauce. Add cherry tomatoes and halloumi chunks mix well and serve!
