One pan chipotle orzo meatballs

A perfect no fuss, wash less dishes mid week dinner idea!

This would be delish with some low fat garlic bread and/ or veg!

Ingredients


  • 6 x 5% less fat  beef meatballs (I used Aldi ones)

  • 1 x red pepper- diced

  • 1 x red onion- diced

  • 250g passatta

  • 8g chipotle pasta

  • 1tsp smoked paprika

  • Half less salt beef stock cube dissolved in 180ml of water

  • Half tsp of sugar

  • 10g garlic purée

  • 5 fresh basil leaves- finely sliced

  • 30g 50% less fat mature cheese

  • 20g grated padano (the powder Parmesan cheese)


  • 166g of dried orzo - this will cook to around 300g and it’s the cooked weight cals that matter most.


Method


In a large frying pan sautée and brown the red onion and peppers and meatballs for 10 mins on a low heat. I used 1kcal spray to keep the oil cals down.


Add all the other ingredients except the cheese and cover with a lid for 15 mins. Stir this regularly so the orzo doesn’t stick to the bottom of the pan.

If the mixture becomes too dry before the orzo is cooked add a bit more water and keep an eye on it.


Check the orzo is cooked- I just tasted a tiny bit of the pasta to make sure it was soft.


Finally top with cheese and cover with lid until melted!


And you’re done!
