Slow Cooker Creamy Pesto Chicken
Ingredients- serves 2
337 calories per portion
1 x large chicken breast or 2 x small- total weight 280g
350g Tomato Passata
50g Sun-Dried Tomato Pesto
10g Very Lazy Chopped Garlic
1x Tsp Basil, Dried
Half of a less salt chicken oxo cube - crushed no need to add water
Half a tsp sugar
80ml Elmlea reduce fat Single Cream
5g Cornflour
Basil, Fresh- 5 leaves
Method
Place the slow cooker on the LOW setting.
Pour the passata into the slow cooker pan and season with dried basil, garlic purée , pesto, salt and black pepper.
Measure out the single cream in a Pyrex jug and whisk in the cornflour.
Pour the cream into the slow cooker and add a handful of fresh basil leaves. Mix well.
Next, submerge the chicken breast fillets into the sauce and cover with lid. Cook for 4 hours.
Garlic Parmesan Mash
I take 40% of the mash and toss takes 60%
40% cals of this is - 233 calories
50% cals of this is - 291 calories
400g peeled Maris piper potatoes
30g Parmesan Cheese, Grated
30ml skimmed Milk (red)
7g light butter
1 garlic cloves
Bring a pan of peeled and chopped potatoes and your garlic cloves to the boil in a pan of salted water.
Once soft, drain and set aside.
Season with a little salt and pepper, then add the milk, butter and grated Parmesan cheese. Mash until smooth.
Serve the chicken and sauce drizzled over the mashed potatoes, with a side of veg!
