Spicy creamy prawn pasta


This one is so quick to make and you don’t need alot of ingredients- winning!!! Ready in 20 mins!

Ingredients


Prawn marinade


  • 200g king prawns (I used frozen and defrosted in fridge all day)

  • 1 minced garlic clove

  • Salt and pepper

  • 1tsp smoked paprika


Pasta and Sauce


  • 170g dried spaghetti (340g when cooked- I weigh out when cooked to double check)


  • 270g vine ripened tomatoes - diced

  • 10g tomato puree

  • 5g garlic purée

  • 1 tsp Dried chilli flakes - use less if you don’t like it spicy

  • Half tsp smoked paprika

  • 60g light cream cheese - you could make cals less by using lightest cream cheese

  • 20 sprays of 1kcal spray

  • 5 fresh basil leaves

  • Half tsp sugar


Method


Combine prawns with prawn seasoning ingredients. Mix well and set aside.


Cook spaghetti  according to packet instructions (remember to generously season the cooking water with salt).


Whilst the pasta is cooking, pan sear

the seasoned prawns on a large frying pan without any oil. Sear for 1 minute per side on high heat. Remove and set aside.


In the same pan (no need to wash), add 1kcal spray oil, garlic and tomato paste and diced tomatoes, chilli flakes and sugar.

Season with salt and pepper to taste.


Turn the heat down to low and simmer with the lid on, for about 10 minutes.


Add your cream cheese and a bit of the pasta water to loosen the sauce.


Once the pasta is ready, return the prawns back into the pan and add your drained pasta! Mix through and serve.


This would be lovely with a side of long-stem broccoli and some reduced fat garlic bread!
