Sugar Free Carrot Cake

Low Calorie Sugar Free Carrot Cake with Cream Cheese Frosting




Carrot cake is my absolute fav! So I decided to make a healthier version!

And yes, it took all of my willpower not to eat the whole thing! šŸ™„šŸ˜¬

8 slices- 195KCAL each


Dry ingredients


120g almond flour

3 tsp cinnamon

1 tsp nutmeg

4-5 tsp stevia

4 tsp baking powder

Combine.


Wet ingredients


1 whole egg

2 egg whites

15g coconut oil

15g vanilla extract

60g purƩe carrots- boil and blitz in food processor

200ml almond milk

75g grated carrot


Combine. šŸ‘©ā€šŸ³ Add wet ingredients to dry and mix well. Pour batter into a baking paper lined loaf tin and Bake for 40 mins at 200 degrees.


Cream Cheese Frosting Ingredients


180g lightest Philadelphia cream cheese

3 tsp stevia

2 tsp vanilla extract

Zest of 1 orange


Mix well


Allow cake to cool before adding frosting. Topped with 25g chopped walnuts!


Serves 8- 195 cals a slice.
