Ingredients
350g raw chicken breast cut into chunks
15g cornflour
1x small red onion
1 x yellow and 1 x red pepper- raw weight 160g combined
100g tinned pineapple chunks
Sauce ingredients
150g passata
100ml pineapple juice - from tin of pineapples
2 x tsp garlic purée (10g)
1 x tsp ginger puree (5g)
1 x tsp chilli puree (5g)
2 tsp (10g) truvia (sero calorie sugar substitute)
2tbsp light soya sauce
1 portion of sticky veetee rice pot
Method
Coat your chicken chunks in corn flour and air fry for 12-15 mins at 200 degrees.
While your chicken is cooking prep your veg qnd mix sauce ingredients. Combine all sauce ingredients into a bowl and mix week.
Stir fry your veg. Add sauce and heat through for a few mins. Add chicken from air fryer and finally pineapple chunks. Mix well and serve!
