Sweet chilli halloumi wraps with spicy bean salad

A meat free high protein dinner or lunch you can prep head of time!

Ingredients- makes 3 wraps- serves 3


Halloumi


  • 225g Light halloumi - sliced

  • 40g sweet chilli sauce

  • 1tsp lime juice


The mayo

  • 30g light mayo

  • 5g sriracha sauce


Salad for wraps

  • 80g romaine lettuce leaves

  • 40g finely sliced carrot

  • 40g finely sliced yellow pepper

  • 15g finely sliced red onion


Salad Beans

  • 400g of tin mixed salad beans in water

  • Handful of coriander- finely cut

  • 1tsp lime

  • 3G garlic purée

  • 1 tsp chilli flakes

  • 15g diced red onion

  • 5g sriracha sauce

  • 15ml balsamic vinegar

  • Salt and Pepper


  • 3 x weight watchers tortilla wraps


Method


Prep all veg. And cut up halloumi.


🫘 Drain beans and add to a big bowl. Combine all salad bean Ingredients and mix well.


🌶️ In a small bowl mix mayo and sriracha sauce.


🧀 In another small bowl combine sweet chilli sauce and lime juice.


🧀 In a large frying pan (I use no oil) fry your halloumi for a few minutes on each side. And coat halloumi in sweet chilli and lime mix!


Combine your wraps- adding salad, spicy mayo and halloumi! And serve with a side of the spicy beans!
