Sweet chilli noodles and salt and pepper chicken

This turned out just how I imagined! Banging! It took 15-20 mins and was the perfect fakeaway!

My plate is 570 calories (plus a few cals for 1kcal spray) including prawn cracker cals!
I serves with some a handful of prawn crackers- 13g = 65 cals (I got mine from Asda but all supermarkets sell them)
Chicken calories - serves 2 - 188 calories each.

How to make the chicken
1 x large chicken breast - raw weight 270g cut into chunks
15g paxo golden bread crumbs
12g salt and pepper seasoning- you can pick this up from the super market/ home bargains
Method
Mix breadcrumbs and seasoning together on a plate and mix well.
Coat chicken chunks in the mix.
When ready to cook- these only take 10-12 mins in the air fryer at 200 degrees.
Spray with a couple of sprays of 1kcal spray (oil cals not included in cals above to track these separately)
How to make your noodles
Noodles calories- so I give Ross just over half and I take a little less than half. I’ll give you cals for 50\50 and you can adjust at your end to suit what you end up having.

Ingredients
150g yellow pepper - finely sliced
50g red onion- finely sliced
60g carrot strips
12g fresh red chilli- dressed and sliced (half in pan- half for garnish)
3 x spring onions - sliced (for garnish)
300g protein egg noodles (Aldi)
The sauce
40g sweet chilli sauce
45g less salt and sugar ketchup
10f garlic purée
5g ginger puree
Half tsp Chinese 5 spice
50ml light sauce sauce
Half tsp sugar
Half tsp chilli flakes
Method
Put chicken on now!
On a high heat stir fry veg for a 5 mins (using 1kcal spray)
Keep the veg moving around the pan.
Add noodles and allow them to heat up. Keep moving around the pan.
Hard sauce but keep a little for the garnish drizzle!
Plate up- I gave Ross a little more than me so I got just less than half and her got just over half.
Top with chicken.
Garnish with left over chilli flakes and spring onions and drizzle over remaining sauce!
