Teriyaki chicken

So easy to prep. Pop it in a pan and let it do its thing for 20 mins while you get other things done!

Ingredients


  • 350g if braw chicken breast - cut into large chunks

  • 1 red onion diced

  • 400ml chicken stock- I used low Salt stock cube

  • 5g garlic purée

  • 10g clear honey

  • 45g lazy teriyaki paste

  • 1 tsp chilli flakes

  • 2 x spring onions - finely sliced



Method


In a frying pan sautee your red onion (i used 1 kcal spray) for a few minutes until soft.


Then Stir in the garlic, chilli flakes and teriyaki paste


Add the chicken breasts in and stir to coat, then pour over the stock, soy sauce and honey.


Simmer for 20- 25 minutes until the sauce turns sticky then remove the chicken from the pan and shred it using 2 forks (+ check it's cooked through)


Stir the shredded chicken back into the pan and throw in your spring onions.


I served mine with long stem brocolli and veetee sticky rice. Great for portion control!
