Tinga shredded chicken

Oh I’ll be making this again. It turned out just as I’d hoped!


We had ours with baked sweet potatoes! What a combo of sweet and spicy!

Ingredients


  • 1 x large chicken breast (260g raw) or two smaller breasts - check weight

  • 1 x small red onion - diced - 60g

  • 1 x yellow bell pepper- diced- 100g

  • 200g chopped tinned tomatoes

  • 30g chipotle paste

  • 1 tsp sugar

  • 10g garlic purée

  • 2tsp lime juice

  • Handful of fresh coriander (I added at the end)


Method


In a large frying pan using 1kcal spray sautee your onions and peppers for 5 mins until soft.


Then add whole chicken breast and seal it. I flipped it around a few times.


Add all other Ingredients and mix well.


Cover your pan with a lid and keep the heat super low so it doesn’t burn and cooked for 20-25 mins (until breast cooked)


Once chicken breast is cooked use two forms and shred your chicken by pulling it apart.


Add chopped coriander mix and serve!


I had mine with a baked sweet potato. And 20g cheese plus a side salad. My plate was just over 500 calories!
