Tomato and Basil Sausage pasta

A quick tasty kid friendly sausage pasta.

If you don’t like chuck of veggies (or your kids don’t) you can blend the sauce before adding in sausage to cook.

450 calories - 3 portions

Ingredients


  • 6x Italian chipolta sausages (I used Aldi brand: heck would be nice too)

  • 1 x red bell pepper- diced

  • 1 x medium red onion - diced

  • 5 x ripe vine cherry tomatoes- halved

  • 50g drained sundried tomatoes- diced

  • 10g garlic purée

  • 200g passata

  • 20g tomato puree

  • 1 x low salt chicken stock cube dissolved in 150ml of boiling water

  • 1 tsp sugar

  • 2 tsp dried basil

  • 1tsp paprika

  • 450g of COOKED macaroni pasta (approx 225g dried weight)


Method


In a large frying plan using 1kcal spray sautée your red onion and peppers on a low heat for 5-10 mins until soft.

Then add cherry tomatoes, paprika, garlic purée, tomatoes puree and stir well for a minute or so.

If you don’t mind veggie chunks add in your sausage as allow it to brown a little/ to seal. For a few mins.


*start cooking your pasta


If you want to puree the sauce- cook your sausages in a separate pan and add later.

Next add pasatta, stock, basil and sugar. And allow your sauce to simmer for 10 mins on a low heat. At this point you can add pasta and serve. Or puree using a blender: hand blender. And combine sauce, pasta and cooked sausages and serve!


We served our with veggies and some cheese!
