Ingredients- serves 1
2 x medium eggs
50g spinach
200g tinned chopped tomatoes
Half tsp chilli flakes
20g 30% less fat cheese
Method
Preheat oven to 200 degrees.
In a colander wilt spinach by poring hot water over it! Then add to a small/ medium oven proof dish.
Add tomatoes. Chilli flakes and mix well.
Season with salt and pepper.
Crack eggs on top and bake for 12 mins.
Remove to add cheese and bake for a further 3 mins!
